Ingredients

  • 1 package egg noodles
  • 1-2 pounds ground beef or turkey
  • 1 carton ricotta cheese
  • 1 carton sour cream
  • handful of green onions
  • 1-2 jars of your favorite red pasta sauce
  • 1 cup of shredded cheese - your favorite kind
  • 1.cook the noodles, drain and set aside.
  • 2.brown the meat adding whatever spices you enjoy in your pasta dishes. I generally add fresh tomatos & onions with garlic, salt, & pepper while browning. Depending on the meat you use, you might need to drain a bit of the fat after browning. Add the sauce and simmer while doing the next step.

Preparation

  1. finely chop the green onions, mix ricotta cheese, sour cream, & onions with cooled cooked noodles. Play with the consistancy for your taste - I generally use all the ricotta and 1/2 the sour cream.
  2. Use any deep casserole dish and layer the cheese/noodle mixture, then the meat mixture.
  3. Top with shredded cheese.
  4. At this point you could freeze. It is preferred to sit in the fridge overnight to let the full flavor come out.
  5. Bake at 350 degrees F for about 30-45 minutes until bubble hot.
  6. Serve with Salad, bread, and wine!
