Ingredients

  • 1 tbsp olive oil
  • 1 cup of chopped onion
  • 1 stalk of celery (diced)
  • 2 cups fresh corn kernels or 10 oz package frozen corn
  • 1 tablespoon flour
  • 8 oz of clam juice
  • 1 cup of water
  • 1 dried bay leaf
  • 1 pound of peeled deveined shrimp
  • 1 cup of milk or half and half
  • 1 tbsp of chopped fresh chives
  • salt and pepper to taste

Preparation

  1. In a large saucepan heat olive oil.
  2. Add onion, celery, and corn; cook 5 minutes.
  3. Sprinkle flour over mixture, cook for 1 minute.
  4. Stir in clam juice, water and bay leaf; bring to a boil.
  5. Add shrimp; cook until done, about 3 minutes.
  6. Stir in milk or half and half; season with salt and pepper. Heat briefly and then serve.
