Corn And Shrimp Soup

Ingredients
- 1 tbsp olive oil
- 1 cup of chopped onion
- 1 stalk of celery (diced)
- 2 cups fresh corn kernels or 10 oz package frozen corn
- 1 tablespoon flour
- 8 oz of clam juice
- 1 cup of water
- 1 dried bay leaf
- 1 pound of peeled deveined shrimp
- 1 cup of milk or half and half
- 1 tbsp of chopped fresh chives
- salt and pepper to taste

Preparation
- In a large saucepan heat olive oil.
- Add onion, celery, and corn; cook 5 minutes.
- Sprinkle flour over mixture, cook for 1 minute.
- Stir in clam juice, water and bay leaf; bring to a boil.
- Add shrimp; cook until done, about 3 minutes.
- Stir in milk or half and half; season with salt and pepper. Heat briefly and then serve.
