• This Cuban Chicken With Pineapple recipe makes for an easy treat that is both tasty and satisfying.

Ingredients

  • 3 1/2-4lb free range chicken, cut in serving pieces
  • salt and pepper to taste
  • 3 tsps olive oil
  • 1 medium onion, chopped
  • 1 clove garlic, chopped
  • 2 ripe tomatoes, peeled & coarsely chopped
  • 3 tsps seedless raisins
  • 1 red chili pepper, seeded & chopped
  • 1/4 tsp oregano
  • 1 bay leaf
  • 1/2 pt rich chicken stock
  • 3/4 lb freshly chopped pineapple and juice
  • 4 tbs. golden rum

Preparation

  1. Rub the lime juice and rind into the chicken pieces, season with salt and
  2. pepper and let stand for half an hour. Heat the oil in a frying pan and sauté
  3. the chicken pieces until just colored. Transfer them to a heavy casserole
  4. large enough to hold them comfortably.
  5. Sauté the onion and garlic in the oil remaining in the pan until the onion is
  6. tender but not browned. Add the tomatoes, raisins, chili pepper, oregano and
  7. bay leaf and cook, stirring occasionally, for about 5 minutes to blend the
  8. flavors.
  9. Pour over the chicken in the casserole and add enough chicken stock barely to
  10. cover. Partially cover the casserole and cook over a low heat for about 45
  11. minutes until the chicken is tender.
  12. Put the pineapple and any juice in a small saucepan and cook until reduced to
  13. half. Add the rum and mix thoroughly and cook for a minute or two. Pour over
  14. the chicken and cook for a further 5 minutes.
