- 1 medium cucumber
- 1 cup grape or cherry tomatoes
- 2 oz. low-fat part-skim mozzarella cheese, cubed
- 1/4 cup diced fresh basil
- 1 teaspoon light extra-virgin olive oil
- Balsamic vinegar to taste
- Pepper to taste
- Peel and chop cucumber, then add basil, tomatoes, and cheese. Lightly drizzle olive oil, and add vinegar and pepper to taste.
