Ingredients

  • 4 chicken breasts
  • 8 oz of sour cream
  • 1 pkg of shredded colby jack cheese
  • 1 can of cream of chicken
  • 1 can of red enchilada sauce
  • 1 pkg of tortillas ( any size- the smaller the tortilla the more enchiladas)

Preparation

  1. Preheat oven to 425 *F
  2. Boil chicken
  3. In a mixing bowl, mix sour cream and shredded cheese(save some cheese to add to the top)
  4. On the stove top, mix the cream of chicken and enchilada sauce mixing with a whisk to smooth
  5. Once chicken is done, shred or dice chicken and add to sour cream and cheese mixture
  6. Fill tortilla with chicken, cheese, sour cream mixture (secure both end to prevent melted cheese from escaping)
  7. Place in baking dish -- whatever size it takes.
  8. Cover with warm cream of chicken/enchilada sauce
  9. Bake until the center is bubbling, usually 20-30 minutes
  10. Cover top with cheese the last 5 minutes
  11. ENJOY!
