Preheat oven to 350 degrees F. Boil chicken. When chicken is cooked, remove from water, let cool, then chop. While chicken is cooling, mix the first 4 ingredients in a small bowl. Mix chopped chicken with 1 cup of mixture & 1/2 cup shredded cheese & divide evenly between the 6 tortillas. Roll tortillas & place seam side down in an 11x7 greased baking dish. Pour remaining mixture over enchiladas & spread to cover tortillas. Bake for 25 minutes. Remove from oven & top with more shredded cheese. Serve with rice & beans. Enjoy.
