Ingredients

  • 1 can of whole kernel corn with juice (15 oz)
  • 1 can cream style corn (15 oz)
  • 2 eggs, beaten
  • 1 cup sour cream
  • 1 Jiffy corn muffin mix (8.5 oz. In bake section)
  • 1 T sugar
  • 1 cup melted butter, divided to 2/3 cup and 1/3 cup
  • 3/4 cup cracker crumbs (reccomend Ritz) (i usually use a full row of ritz)

Preparation

  • Mix together whole kernel corn, cream style corn, eggs, sour cream, corn muffin mix, sugar and 2/3 cup of melted butter. Pour into 2.5 quart casserole. Mix 3/4 cup cracker crumbs and remaining 1/3 cup melted butter together and put over top of casserole. Bake 1 hour at 350 degrees.
