Ingredients

  • 4 pounds of pork - cut into bite size pieces (I use the butterfly cut chops)
  • 2 packets of taco seasonings (Go for the mild if kids are sensitive to spices)
  • Oil to line the pot
  • 1 x 24 oz jar of Pace Picante (Can use mild or Medium Heat based on family tolerance to spice)
  • 1 jar of peach jam or preserves

Preparation

  1. Cooked white rice
  2. Cut fat off pork and cut into bite size. Place into a zip lock bag with the taco seasoning and coat all sides. Cook the seasoned pork in a pot well coated with oil to prevent sticking. After meat is cooked, pour in the Pace and Peach preserves. Simmer for about 10 minutes. If you want to thicken, make of pace of water and corn starch and pour into the mixture - stirring well. Serve over a bed of white rice. You may want to serve a side salad as well. This is a quick and easy recipe!
