  • 1cup long grain rice
  • variety of diced veggies( carrots, green peppers,potatoes, aubergine,peas etc..)
  • diced chicken or mince
  • 1.5 tablespoon tomato paste
  • 1.5 tsp salt
  • 1 tsp paprika
  • 1 tsp turmeric
  • 1 tsp black pepper
  • 1 cup water
  • 2 tablespoons olive oil

Preparation

  1. boil water, add tomato paste and spices and oil and allow to simmer for 12 mins
  2. wash rice, drain, mix in casserole with veggies and meat ..gently add sauce and cover then place in oven for 30 to 40 mins till cooked.
