Ingredients

  • 1 package (10 oz.) frozen corn, thawed.
  • 1 1/2 cups frozen edmamame, thawed
  • 3 scallions, thinly sliced
  • 1 red pepper, seeded chopped
  • 1/4 cup vegetable oil
  • 1/4 cup white vinegar
  • 2 Tablespoons sugar (or splenda)
  • 1 Tablespoon fresh chopped parsely
  • 1 can (4 ounces) sliced black olives

Preparation

  1. In large bowl, combine corn, edamame, scallions and red pepper.
  2. In separate bowl, stir in oil, vinegar, sugar and parsley.
  3. Pour vinegar mix over salad. Stir to combine.
  4. Season with salt and pepper to taste, if desired.
  5. Top with sliced olives.
