Ingredients

  • 125g butter, softened
  • 1/2 cup caster sugar
  • 1 teaspoon vanilla essence
  • 1 1/2 cups plain flour
  • 1 to 2 tablespoons milk
  • Icing
  • 1 cup pure icing sugar, sifted
  • 4 to 5 teaspoons water
  • food coloring of choice

Preparation

  1. Using an electric mixer, beat butter, sugar and vanilla until well combined.
  2. Use a wooden spoon to stir in flour and enough milk to form a soft dough.
  3. Turn dough out onto a lightly floured surface. Knead until smooth.
  4. Divide dough in half. Press each half into a 10cm (diameter) round.
  5. Wrap separately in greaseproof paper and refrigerate for 40 minutes, or until firm.
  6. Preheat oven to 320*F.
  7. Line 2 baking trays with non-stick baking paper. Roll dough out between 2 sheets of baking paper to 5mm thick.
  8. Cut out shapes and place onto lined tray. Refrigerate until firm. Press leftover dough together. Repeat until all dough is used.
  9. Bake cookies for 12 to 15 minutes, or until golden and cooked through. Transfer to a wire rack to cool.
