My mother wasn't famous for her cooking, but I always loved her egg-in-the-island...just had to scrape the black parts off. It's an easy meal that works for breakfast, lunch, dinner or snack, making it the best friend of every mother and college student alike.
Use a glass to cut out a circle from each slice of bread, saving the circles to toast in the pan too. Heat butter or oil in a frying pan and lay the bread inside.
Crack an egg into the center hole of each slice. If you don't like runny yolks, go ahead and pinch or poke them.
Flip 'em over once the bottom is getting nice and golden.
Sprinkle on a little sea salt before serving.
It's really that simple--can you believe it? My kids love these and so do I. Round it out with cottage cheese and veggie sticks, or a salad with feta, and you've got a meal full of protein, complex carbs, fiber and calcium.
