- 1 Lb. radiottore pasta
- 4or 5 scallions
- crumbled feta cheese
- 2 small jars marinated artichoke hearts
- olive oil
- While the pasta cooks, put a Tbs. olive oil in the bottom of large serving bowl.
- Drain juices of artichokes into bowl. Chop artichoke hearts into small pcs. add to bowl.
- Chop scallions finely, add to bowl
- Add crumbled feta to bowl.
- Stir together well.
- Drain cooked pasta, add to bowl
- Stir well, add parmesan cheese if desired.
