  • 1 large can Pinto Beans (drained)
  • 1 15oz. can Mexican Beans
  • 1-2 carrots, peeled and cut up
  • 1-3 stalks celery, cut up
  • 1 medium onion, peeled and chopped

Preparation

  1. cumin, garlic powder, hot sauce, salt (all to taste), about 1 1/2 t. sugar
  2. Cook carrots, celery and onion in small amount of water until barely tender in microwave (takes about 3 1/2 minutes. Puree beans in food processor to desired consistency. Pour into large soup pot. Puree cooked veggies, including the cooking liquid. Add to soup pot. Add spices to taste. I often add about 1/4 c. hot salsa. Heat just to boiling. Ladle into bowls with a small amount of butter. Nice to top with shredded cheddar cheese, dollop of sour cream or guacamole. Today i added a few drops of liquid smoke. Just experiment and tweak the recipe to your liking. It's fast, delicious, and nutritious...not to mention super easy and easy on the budget. Hope you enjoy it.
