Ingredients

  • 1 pound beef sirloin or stewing beef
  • 3 tablespoonsmaussaman curry paste (see recipe below)
  • 1/2 cup coconut cream
  • 2 cups of coconut milk
  • 5 cardamom seeds, roasted until fragrant
  • 1 stick cinnamon, about 3 inches in length
  • 7 ounces potatoes, peeled and cut into large chunks
  • 1 heaped tablespoon unsalted peanuts, chopped
  • 10 shallots
  • 3 bay leaves
  • 3 tablespoons chopped palm sugar
  • 2 tablespoons fish sauce
  • 3 tablespoons tamarind juice

Preparation

  1. Cook curry paste and coconut cream together for 5 minutes.
  2. Add the beef and fry for 8-10 minutes.
  3. Add the coconut milk, bring to a boil and simmer gently for 10 minutes.
  4. Add all the remaining ingredients and cook until the potatoes and meat are tender.
  5. Serve with sliced pickled ginger, pickled vegetables and rice.
