• One-pot meal that is healthy and everyone in the family loves to eat. We cook the rice weekly and reheat it for other meals so this dish can reuse that rice or make it for this meal. I usually start this meal during the lunch time hour and it's ready for dinner time.

Ingredients

  • 3 pounds Chicken (breasts and thighs)
  • 1/2 chopped onion (we prefer Maui)
  • ¾ cups San-J gluten free tamari
  • ⅓ cups Balsamic Vinegar
  • 2 Tablespoons Wan Ja Shan Organic Gluten-Free Worcestershire Sauce
  • 2 whole Bay Leaves
  • 5 cloves chopped garlic
  • 2 Tablespoons cracked Peppercorns
  • 1 Tablespoon Palm Sugar
  • 2 Tablespoons Taro Powder ( we sourced ours from Voyaging Foods)
  • ⅓ cups Chicken Broth
  • Organic Brown Rice from Lotus Foods
  • Chives For Serving

Preparation

  1. Place chicken and onion in slow cooker.
  2. Pour gluten-free San-J tamari, balsamic vinegar, GF Worcestershire sauce, garlic, and peppercorns into the slow cooker and stir around, coating chicken.
  3. Add palm sugar, taro powder, and chicken broth and stir again.
  4. Cook on low for 5-6 hours.
  5. Pull the chicken into shreds.
  6. serve over a bowl of brown rice and garnish with chives.
