Ingredients

  • 5 medium pork chops ( bone in or out- your preference)
  • 3cups cold water
  • 1 cup apple cider vinegar
  • 1 egg
  • 4 Tbsp brown or dijon mustard
  • 1/2 tsp garlic powder
  • 1c cheese goldfish crackers
  • 1/2 cup plain breadcrumbs
  • 2 Tbsp parmesan cheese
  • Salt & Pepper to taste

Preparation

  1. Combine water and vinegar
  2. Soak pork chops in vinegar solution for 2 hours
  3. Mix together mustard, garlic, and egg.
  4. Pour all crackers in ziploc bag, and crush until crackers are mostly crumbs.
  5. Combine cracker & bread crumbs
  6. Preheat oven to 375
  7. Rinse and dry pork chops
  8. Dredge chops in mustard mixture then
  9. coat with cracker crumbs
  10. Spray broiler rack with nonstick spray, or brush with melted butter
  11. Place breaded chops on rack
  12. Sprinkle with parmesan cheese
  13. Bake at 375 for 45minutes.
  14. These don't take long to prepare, and it's easy to remember. Serve with garlic mashed potatoes or smashed cauliflower and shredded cheddar cheese.
  15. *personal note- I like to turn on the broiler for a few minutes at the end to get the top of the chops really crispy. YUM!
