Ingredients

  • 2 eggs
  • 1 cup mashed, ripe bananas (2 - 3 bananas)
  • 1 3/4 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 - 1 cup sugar
  • 1 cup vegetable oil
  • 1teaspoon ginger powder (optional)
  • 1 teaspoon nutmeg (optional)
  • 1 teaspoon cinnamon (optional)

Preparation

  1. Pre-heat oven to about 325 (my oven is crazy so this is approximate - if it seems too hot lower to 300).
  2. Mash the bananas and set aside.
  3. Sift flour, baking powder, baking soda and salt.
  4. If using ginger, nutmeg and/or cinnamon, sift those with the flour as well.
  5. Beat together eggs, oil and sugar till slightly frothy.
  6. Add bananas to egg mixture.
  7. Fold in flour gently.
  8. Mix enough to incorporate, but don't over mix.
  9. Pour into greased and floured loaf tin.
  10. Bake for 30-40 minutes until knife or toothpick comes out clean when inserted in the middle.
  11. Enjoy!
