Garlic belongs to the powerful Allium family of vegetables. You have to crush or cut it and then let it sit for a while so that the enzyme alliinase can turn the chemical alliin into alliicin, an anti-cancer compound. Cooking, however, can destroy the benefits.
This recipe combines raw garlic with Brazil nuts, one of the few food sources of cancer- fighting selenium. Taken together, the two compounds pack an even powerful anti-cancer punch.
4 large handfuls green beans
5 Brazil nuts
2 cloves garlic, smashed and allowed to sit 15 minutes before using
