Ingredients

  • 1 pound of lean ground beef
  • 2 cans cream of chicken soup ( I use reduced fat/sodium)
  • 1 8 ounce tub of sour cream
  • 2 small cans of green chilis
  • 2 small cans of sliced black olives
  • 1 regular size bag of fritos
  • 1 8 ounce bag of shredded cheese ( cheddar)

Preparation

  1. Preheat oven to 350 degrees; lightly spray 9X13 baking dish with nonstick spray. Brown ground beef in 10 inch skillet; drain. Add cream of chicken soup, tub of sour cream, green chilis, and black olives, mix in skillet until combined.
  2. Pour mixture into baking dish. Spread cheese over mixture. Crumble one half of the bag of fritos and spread crumbled chips over the top of the cheese.
  3. Bake uncovered for 8-10 minutes in oven. Remove from oven and serve.
  4. You can place some of the remaining un-crumbled fritos on a plate and then cover with the casserole for added crunch and flavor.
