Grilled Meatloaf
- I love meatloaf! It is my number one go to comfort food. I was craving meatloaf during the summer and bought all the ingredients before it hit me that it was 106 degrees outside. I didn’t want to heat up my house making meatloaf. Then the most awesome thought occurred to me, grill the meatloaf!
- Now what makes grilled meatloaf so much better than baked meatloaf? It is so much juicer on the grill than in the oven and it cooks in 20 minutes instead of an hour! I put this meal on my table from start to finish in 30 minutes. And let us not forget that I didn't have to heat up my house to make it!
- And between you and me, I was convinced that I created a new dish since I hadn’t heard of grilled meatloaf before. Turns out I’m not an original but it’s delicious.
Ingredients
- 1 pound ground beef
- 2 slices of bread
- 1/8 cup finely chopped onion
- 2 cloves minced garlic
- 1 t prepared horseradish
- 1 egg
- 1 T olive oil
- 1/2 t Worcestershire sauce
- 1/2 t salt
- 1/2 t pepper
- ketchup, BBQ sauce, cheese optional

Preparation
- 1. Sauté onions over medium heat for 5 minutes.
- 2. In a med sized bowl add egg, salt, pepper, horseradish, and Worcestershire sauce and mix together.
- 3. Put bread in the blender and make bread crumbs.
- 4. Add ground beef, bread crumbs, and onion to the egg mixture and combine. I use my hands, it is the easiest way in my opinion.
- 5. Shape into 3 mini meatloaves. I put a little extra salt and pepper on top.
- 6. Turn on your grill to medium heat.
- 7. Once your grill is ready, lower the temperature to low and put on the meatloaf and close the lid. Cook for 7-10 minutes on each side. (Grill temps are going to vary so watch your meat.)
- 8. At the end of your cooking time you can add ketchup, BBQ sauce, or cheese to the top and serve!
