• I am always on the search for healthy alternatives to cookies and other sugary snacks. I make these granola bars once a week at least and my family gobbles them up.
  • I adapted this recipe from one I found online.

Ingredients

  • 2 cups of rolled oats
  • 1 cup whole wheat pastry flour/brown rice flour works too
  • 1 cup wheat germ
  • 1/2 teaspoon salt
  • 1 tsp cinnamon
  • 1/2 cup ground flax seeds
  • 1/2 cup coconut oil
  • 1/2 cup Agave Syrup
  • 2 tsps vanilla extract
  • 1 cup sugar free applesauce
  • 1/2 cup chocolate chips
  • 1/2 cup coconut flakes

Preparation

  1. 1. Preheat oven to 350 degrees
  2. 2. Toast the oats lightly in a dry skillet over med. heat. Let cool.
  3. 3. In a large bowl combine dry ingredients including the oats.
  4. 4. In a separate bowl combine te wet ingredients.
  5. 5. Add the wet mixture to the dry ingredients.
  6. 6. Add in chocolate chips and coconut.
  7. 7. Spray or coat a 9x9" baking pan.
  8. 8. Pour the mixture into the pan and press down.
  9. 9. Bake at 350 for 30 minutes. Cut bars while they are still warm.
  10. They usually keep in the refrigerator for about a week. (If they last that long!)
