Ingredients

  • 1-1.5 lbs. cooked, cut up chicken
  • 1/2 c. Mexican table cream (could use sour cream, half and half, cream)
  • 1 can mild diced chilies
  • 1 large can green enchilada sauce
  • Juice from 2 limes
  • 6 tbs. honey
  • 1 tbs. crushed garlic
  • Chili powder to taste
  • 15 small corn tortillas cut into short strips
  • Shredded cheese

Preparation

  1. Combine lime juice, garlic, chilies, chili powder and honey then add cooked chicken. Marinate at least 1 hour.
  2. Combine the cream and enchilada sauce in small bowl.
  3. In greased baking pan (9x13) put a small amount of the enchilada sauce mixture in the bottom of the pan, add a third of the tortilla strips then layer half the chicken mixture and a third of the cheese, repeat ending with tortilla strips, the remaining enchilada sauce and top with cheese.
  4. Bake uncovered for 40-45 min until bubbly.
  5. Serve with black beans and corn
