This no knead spelt bread is packed with flavor and nutrients. A great staple for family dinners or parties that will wow the table. This bread is something you make over night. The bulk fermentation takes 12-18 hours to rise so we simply mix before bed, let it rise over night and finish it off the next morning, or you could mix before work and have fresh delicious bread by dinner time. Nothing says "Home" like fresh bread from scratch. Great to do with kids!
2 Cups Unbleached, Unbromated Bread Flour (All Purpose is fine but has less protein. I recommend King Arthur)
1 Cup Whole Spelt Flour (Whole Wheat will work just as well but will yield a different flavor.)
1/4 tsp Instant Yeast (I recommend Lesaffre SAF-Instant Red Dry Yeast. )
