Ingredients

  • 1 1/2 cups Riesling wine
  • 9 large eggs separated
  • 1 1/4 cups sugar
  • Zest of 2 lemons
  • Juice of 1 lemon
  • 1 1/2 tsp salt kosher
  • 2 1/2 cups sifted cake flour
  • 3/4 cup extra virgin olive oil
  • Icing:
  • 2 cups powdered sugar (sifted)
  • 1 tbsp melted butter
  • 2 tbsp lemon juice
  • Lemon zest to taste

Preparation

  1. Whip yolks and sugar till pale (full volume) add lemon zest, juice, and wine
  2. Sift cake flour and salt
  3. Whip egg whites full volume
  4. Incorporate whites into yolk mixture, then add sifted dry and finish with olive oil.
  5. Bake on a 1/2 sheet pan till done at 325 *F convection (about 25-30 min)
  6. If opting to bake cake in a bundt pan or loaf pan instead of a cookie sheet, take the baking time up about 10 minutes, and check with a toothpick for doneness before removing.
  7. For icing, blend all ingredients together until smooth.
