  • 1/4c confectioners sugar
  • 1 tsp lemon zest
  • 1c flour
  • pinch salt
  • Filling:
  • 2 eggs
  • 1c sugar
  • 2 tbs flour
  • 3 tbs lemon juice
  • 1 tsp lemon zest

Preparation

  1. To make crust: beat butter an sugar, add zest flour & salt. Press into bottom of lightly sprayed pan.
  2. Bake 20 min till very lightly golden.
  3. To make filling, beat together ingredients.
  4. Pour over crust and bake for 20-25 minutes, until custard is set and edges are barely brown.
  5. cool and cut into squares, dust with confectioners sugar.
