Cook lentils in pressure cooker, half full of cold water, for about half hour. Or soak overnight and boil until soft in saucepan, or buy tinned lentils.
Fry onion and garlic, chopped peppers and sliced sausage in bit of sunflower oil until soft/browning. Add tins tomatoes and stock with half pint of boiling water. Cook for 5 mins. Add to cooked lentils so all in one pot. Add salt and pepper to taste.
Serve with boiled basmati rice. I always do 2 mugs of Tilda basmati rice and 4 mugs cold water and lots of nsalt. Boil and cook until all water gone. Ready to serve. Lovely and healthy and enough for 2 days!
