  • 1 lb Linguine
  • 1 lb turkey sausage, casings removed
  • 6 garlic cloves, thinly sliced
  • 4 yellow (or red) bell peppers, thinly sliced
  • 4 T butter
  • 4 T arugula, torn
  • Fresh shavings of Parmesan cheese

Preparation

  1. Coarse salt and ground pepper for seasoning
  2. Cook linguine.
  3. Drain, reserving 1 1/2 cups pasta water; return pasta to pot.
  4. Meanwhile, cook sausage and 2 tablespoons water in a large covered nonstick skillet over medium until fat renders, 5 minutes.
  5. Uncover; raise heat to medium-high.
  6. Brown sausage, breaking it up with a spoon, 7 minutes.
  7. Add garlic, bell peppers, and 1/4 cup reserved pasta water; cook until peppers soften, 6 minutes.
  8. Add 3/4 cup pasta water and butter; swirl to combine.
  9. Transfer to pot.
  10. Add arugula; season with salt and pepper.
  11. Toss; add more pasta water as desired.
  12. Serve.
