Ingredients

  • 1/4 Cup Olive Oil (or desired amt)
  • 3 Celery Stalks (diced into small cubes)
  • 1 Medium Onion (diced)
  • 5 Cloves of Garlic (minced/chopped small)
  • 1 Can Tomato Sauce (29 ozs.)
  • 1 Box Ditalini Pasta
  • 1 Quart Chicken STOCK
  • 2 Cans White Kidney Beans
  • 2 Cups Water
  • Oregano, Basil, Salt, Pepper

Preparation

  1. Start water for pasta.
  2. In deep pot, add Oil, (Diced) Celery, (Diced) Onion, (Minced/Chopped) Garlic stirring frequently until softened.
  3. Once celery, Onion, and garlic are softened, add Can of Sauce, Quart of Chicken STOCK, 2 Cans of Beans, 2 Cups of Water and Seasonings.
  4. Cook, stirring occasionally until pasta is done.
  5. Drain Pasta and Add to Bean Mixture.
  6. Cook for another 15 to 20 minutes.
  7. Serve topped with Parmesan Cheese and Italian Bread to side.
  8. It's SO simple and So delicious!
