Slice the potatoes in dice sized pieces and put them in a bowl.
Dice the onion in very fine pieces and add to the bowl.
Add sour cream and mayonnaise and stir until everything is well mixed.
Add a pinch of salt and pepper. Taste it.
If you do not like red beets, you can just use this part of the recipe for "plain" potato salad.
Take the pickled red beets and slice them in dice sized pieces, add them to the potato salad. Take some of the juice from the pickled red beet container and add to the previously mixed salad. This will turn the salad into a beautiful purple.
