Ingredients

  • 2lbs ground beef
  • 1 large onion
  • 4oz can hot chili peppers
  • 8oz cheddar cheese
  • 1 cup self rising corn meal
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 2 eggs beaten
  • 1 cup buttermilk
  • 1/3 cup oil
  • 16oz can, creamed corn
  • 2 packages taco seasoning

Preparation

  • Brown beef and onion. Drain. Add taco mix and 1/2 cup water, and chili pepper. Mix and let simmer for 5 minutes. In large bowl add corn meal, salt and soda. Add eggs, buttermilk, oil and creamed corn. Pour 1/2 of mixture into well greased 10in iron skillet. Top with beef mixture and cheddar cheese. Pour remaining corn batter. Bake at 350 for 45 minutes.
