• Ingredients:
  • 3 pkgs of sweet yellow cornbread mix, 1 pkg mixed by itself, the other two together
  • 1 can of cream style corn
  • 1 can of whole kernal corn
  • 2 cups shredded cheese
  • 4-6 serrano peppers, chopped
  • 1 small can of Rotel, drained very well
  • 1 pkg of spicey sausage, cooked and drained
  • Directions:
  • Preheat oven according to what is listed on the cornbread pkg. Spray non-stick spray on 9x11 casserole dish. Pour in 1 pkg of cornbread, already mixed according to directions on pkg. Next put sausage on top. Then add the shredded cheese. Then add the drained Rotel. Then, mix the cans of corn together, and put that on top of the Rotel. Then add the chopped peppers. Finally, add the last two pkgs of cornbread on top. Cook according to directions on cornbread pkg. Cornbread should be golden brown on top when done. Serve with pinto beans. Delicious!!!
