Ingredients

  • 1&1/2 pounds thin steak meat cut into bite size pieces
  • 3-4 medium potatoes cut into small cubes
  • 1&1/2 dozen tortillas
  • 1 pkg of pork or beef chorizo
  • 1 pgk os shredded cheddar cheese
  • 1 medium size can of enchilada sauce
  • 13 by 9 square baking dish

Preparation

  1. preheat oven to 350 degrees
  2. cook meat and potatoes together until potaoes are soft then add the chorizo and let that cook for about 10 minutes this will be your filling for the enchiladas open the can of enchilada sauce and put into a bowl large enough for the tortilla to fit warm the tortilla up then place the tortilla in the sauce and remove and place into the baking dish fill with the meat and potato filling the roll once you are all done pour the left over sauce onto the top of the rolled enchiladas and spinkle with the shredded cheese and bake until cheese is melted!!
