Ingredients

  • 1 lb rigatoni pasta
  • 8ounce cooked boneless, skinless shredded chicken
  • 1/4 cup olives
  • 1 chopped med. onion
  • 1 minced clove garlic
  • 1 seeded & minced jalepeno pepper ( or green peppers)
  • 3tbsp chili powder
  • 1 undrained 28oz can diced tomatoes
  • 1 tsp cumin
  • 1 tsp oregano

Preparation

  1. preheat oven 375
  2. cook pasta
  3. heat oil in med saucepan (med. heat)
  4. Add onion, garlic & j. pepper into saucepan
  5. cook until softened (apx 3 min)
  6. stir in chili powder and stir for about a minute
  7. Add tomatoes with liquid, cumin and oregano
  8. Simmer until slightly thicken (apx 15 min)
  9. In a bowl combine pasta, chx, olives, 3/4 cheese and sauce
  10. 9)Spoon into a baking dish slightly sprayed with veg oil
  11. Sprinkle extra cheese on top
  12. Cover loosely with foil and bake until cheese is melted (apx 15min)
