• Quick and easy Mexican Rice!! (you can even make the dish or all the ingredients for the dish, the night before. My kids are teenagers with big appetites, so I double the recipe.This dish also heats up great in the microwave for the leftovers.)
  • 1 lb. lean ground beef
  • 1 1/2 cups Uncle Ben's Converted Rice (or any converted rice)
  • 2 cups grated Cracker Barrel Old Cheddar (i find this cheese works the best for flavor, also No Name Nacho Pre-grated cheese works well, but is more spicy.)
  • 1 Medium Red Onion (if u double the recipe..1 large red onion will do)
  • 1 Large Jar of Salsa
  • 1 can of corn ( can substitute frozen if u like and defrost in microwave. do not fully cook)
  • Put water on for the rice using any method of cooking on the package u like. Brown gound beef in skillet or microwave. Drain off excess fat ( I rinse the fat off with hot water from my kettle..makes it even more lean. U get enough fat in the cheese.) Set aside. While browning beef , add rice for cooking. Set the timer, do not overcook. Next open the can of corn, drain, set aside. Finely chop the red onion, set aside. Grate the cheese, set aside. Open jar of Salsa. Drain rice if needed, and let cool slightly. Pre-heat oven to 350' degree oven. In a very large bowl dump in ground beef and rice, mix lightly. Next mix lightly, adding in the corn and onion. Add the jar of salsa and mix lightly but well. Add half the cheese (1 cup) into the mixture. Mix then dump into 13'X9" pan. (Mine is glass, but any lasagna type pan will do.) Cover in tin foil and bake for 30-35 minutes. Remove from oven. Remove tinfoil and top with remaining cheese. Shut oven off and put rice back in oven to melt cheese. Put out plates and add tortilla scoops (well any hard tortilla will do). Kids like finger type foods, and they can be shown how to scoop up the rice using two tortilla chips. (When my kids were real little, they used a spoon. ) This is a great dish to make the night before by cooking rice and beef , store in same container when cool. Chop ur onion, store in own container. Grate cheese and lightly put into own container. (Onion and cheese can also go into baggies.) Pre-heat oven.This will only leave the mix together(don't worry about mixing lightly if rice is cold.) Open corn and salsa, mix and dinner is in, in the time it takes to pre-heat the oven. The other easy way to do dinner is make everything the night before, put into baking dish and put directly into oven at supper. If u use a glass dish make sure it is fridge to oven friendly. Top either method with remaining cheese, melt and Yum! Dinner is done. To make this dish vegetarian friendly, omit the beef! Hope u enjoy as much as we all do!
