Ingredients

  • 2 lbs. any kind of meat
  • 1 cup mild salsa
  • 1 c uncooked rice
  • 1 1/4 cumin
  • 2 c shredded sharp Cheddar cheese, divided
  • 3/4 c sour cream
  • 2/3 c finely chopped green onion (green and white parts)
  • 3 tblsp chopped cilantro
  • 3/4 tsp salt
  • 1/2 tsp red pepper
  • Preheat oven to 350 degrees F: lightly coat 11x7-inch baking dish with Pam; set aside.

Preparation

  1. Remove cooked rice; add 1 c cheddar cheese, sour cream, green onion, cilantro, salt and red pepper. Toss gently and thoroughly to blend.
  2. Spoon rice mixture into baking dish, spoon beef mixture over rice mixture. Cover with aluminum foil. Bake for 20 minutes or until heated through. Sprinkle with remaining cheddar cheese. Bake uncovered for 3 minutes longer or until cheese melts.
  3. This recipe is doubled because my family and my neighbors love it. When I make it, I have to make sure everyone gets some!!
