Remove cooked rice; add 1 c cheddar cheese, sour cream, green onion, cilantro, salt and red pepper. Toss gently and thoroughly to blend.
Spoon rice mixture into baking dish, spoon beef mixture over rice mixture. Cover with aluminum foil. Bake for 20 minutes or until heated through. Sprinkle with remaining cheddar cheese. Bake uncovered for 3 minutes longer or until cheese melts.
This recipe is doubled because my family and my neighbors love it. When I make it, I have to make sure everyone gets some!!
