Ingredients

  • 2 cups unbleached all-purpose flour
  • 1/2 tsp sea salt
  • 2 tsp baking powder
  • 1/2 cup granulated sugar
  • 1/4 cup sugar substitute (or more granulated sugar)
  • 2 tbsp butter, melted
  • 2 eggs
  • ¾ cup low fat plain yogurt
  • 6 Tbsp Meyer Lemon juice
  • 1 tsp vanilla extract

Preparation

  1. Preheat oven to 375 degrees.
  2. Spray a doughnut pan with cooking spray.
  3. Mix together flour, salt, baking powder, sugar, and sugar substitute (if using).
  4. In a separate bowl, mix the melted butter, eggs, yogurt, lemon juice, and vanilla extract.
  5. Add wet ingredients to the dry and mix to combine.
  6. Fill the donut pan 2/3 full of batter. (I just use a spoon, but some people prefer to pipe it in.)
  7. Bake for 12-15 minutes.
  8. Remove from pan and let cool on wire rack.
  9. Top donuts as desired. (Pictured is a simple glaze of confectioners sugar & Meyer lemon juice)
