Meyer Lemon Baked Donuts
- Delicious baked cake donuts with the refreshing sweet-tart flavor of Meyer Lemons!
Ingredients
- 2 cups unbleached all-purpose flour
- 1/2 tsp sea salt
- 2 tsp baking powder
- 1/2 cup granulated sugar
- 1/4 cup sugar substitute (or more granulated sugar)
- 2 tbsp butter, melted
- 2 eggs
- ¾ cup low fat plain yogurt
- 6 Tbsp Meyer Lemon juice
- 1 tsp vanilla extract

Preparation
- Preheat oven to 375 degrees.
- Spray a doughnut pan with cooking spray.
- Mix together flour, salt, baking powder, sugar, and sugar substitute (if using).
- In a separate bowl, mix the melted butter, eggs, yogurt, lemon juice, and vanilla extract.
- Add wet ingredients to the dry and mix to combine.
- Fill the donut pan 2/3 full of batter. (I just use a spoon, but some people prefer to pipe it in.)
- Bake for 12-15 minutes.
- Remove from pan and let cool on wire rack.
- Top donuts as desired. (Pictured is a simple glaze of confectioners sugar & Meyer lemon juice)
