  • The traditional Quiche recipe calls for 3-4 eggs, heavy whipping cream, ham, regular cheese, and mayo and is filled with cholesterol, fat and is extremely high in calories and lacking in nutrition. Sounds more like a heart attack on a plate. Can’t imagine that anyone still cooks this way. Now we know better and want better for our bodies!
  • Try our version of quiche which actually tastes better and is better for you, with no cholesterol and much lower in fat and calories, without sacrificing taste. Plus, the 5 added veggies give you a nutritional boost! I bet your guests won’t even be able to taste the difference!

Ingredients

  • “Creamy filling”
  • 1 package extra firm tofu
  • 2 tablespoons dijon mustard
  • 1/4 cup nutritional yeast
  • 1/4 cup raw cashews
  • 1 freshly squeezed lemon
  • 1/4 cup vegan mayo, such as Earth Balance
  • 1 teaspoon thyme, dried
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground pepper
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon oregano, dried
  • 1/4 cup rice milk
  • Combine the above ingredients in a food processor until smooth and creamy. In the meantime, heat a skillet and preheat the oven to 400 degrees.
  • Next, chop and cook the following veggies in the order listed, which will be added to your quiche! Cook until the spinach begins to wilt.
  • Veggie filling
  • 1 teaspoon Earth Balance vegan butter
  • 3 scallions, chopped
  • 2 cloves garlic, minced
  • 1/2 cup broccoli, chopped
  • 1 cup white button mushrooms, chopped
  • 2 cups fresh spinach
  • 1/4 teaspoon cumin
  • 1/2 teaspoon sea salt

  • 1/2 cup vegan mozerella cheese
  • Line a 9 inch round pie pan with a pre-made vegan crust
  • Pour mixture from bowl into pan
  • Top with 1/2 teaspoon paprika

Preparation

  1. Line a 9 inch round pie pan with a pre-made vegan crust
  2. Pour mixture from bowl into pan
  3. Top with 1/2 teaspoon paprika
  4. Cook 30 minutes at 400 degress or until slightly browned
