• I've always had a hard time getting my kids to eat enough protein and vegetables. After a lot of various recipes that failed to do the trick, I decided to make one up on my own and give it a go. Success! My kids love it and even my husband loves it. It's healthy, hearty, and fun to eat. Unfortunately, I'm not one to cook with recipes or measurements so my recipe below is a close approximate.

Ingredients

  • 1 package ground turkey
  • 1 package ground chicken (or you could just do 2 packages of ground turkey)
  • 5 lbs. baby spinach
  • 10 large garlic cloves
  • 1 large carrot
  • 2 cups yellow corn
  • 1 onion
  • 2 whole eggs
  • 2 egg whites
  • 1-2 tsp. salt (depending on taste)

Preparation

  1. First, make sure your meat is all thawed and waiting for you in the refrigerator.
  2. Wash the baby spinach, drain, and place in food processor on low or mince very well. Once it looks almost like pesto consistency you can put it aside. You can do this for the carrots and onions as well, but I like to chop the onions so there's some texture.
  3. Mince the garlic cloves in the food processor.
  4. Place all the minced and chopped vegetables in a large bowl, including the yellow corn.
  5. Place the meat in with the vegetables and mix (using hands seem to work the best for me).
  6. In a small bowl, mix the eggs. Then, pour them into the large bowl with all the other ingredients.
  7. Add as much or little salt as you want and do a final mix.
  8. Use a non-stick pan with a small amount of oil, then you can start using a spoon or scoop to make small or big patties. I scoop it up and then just use my finger to plop them into the pan and pat it slightly to make the shape more patty-like.
  9. Cook on each side for about 3-5 minutes for small patties and 5-8 minutes for big patties. Serve and enjoy.
