Ingredients

  • 5 TBS Butter
  • 1/2 lb mushrooms, chopped finely
  • 1/2 t salt
  • 1/4 t freshly ground pepper
  • 1 1/2 c bread cumbs
  • 1/4 t nutmeg
  • 4 chicken breasts, boned,halved, and pounded flat
  • 1/2 heavy cream(I sub w/ 1/2 & 1/2)
  • 1/2 c chicken broth

Preparation

  1. Preheat oven to 325 F.
  2. Melt 4 TBS butter in a skillet.
  3. Add the mushrooms, salt, and pepper and cook, stiiring often, until the mushrooms turn very dark and absorb all of the butter.
  4. Remove from the heat and stir in 3/4 c of the bread crumbs and the nutmeg.
  5. Divide the mushroom stuffing into 8 portions and place a portion in the center of each piece of chicken.
  6. Fold the chicken around the stuffing and place seam side down in a buttered, shallow baking dish.
  7. Melt the remaining TBS of butter and brush over the chicken. Sprinkle with the remaining 3/4 of bread crumbs.
  8. Pour on cream and broth.
  9. Bake for 30min OR until lightly browned.
