Ingredients

  • For Crusty Base:
  • 250g Shortbread biscuits
  • 125g melted butter
  • 1 tsp. Cinnamon
  • For Filling:
  • 250g Cream Cheese
  • 125g Ricotta Cheese
  • 1 cup Juice (Pineapple, Orange, or Apple work best)
  • 1 tblsp. Gelatine
  • 1/2 cup Sweetened Condensed Milk
  • 300ml Cream (whipped)

Preparation

  1. Crush biscuits finely & combine with Cinnamon, adding melted butter & mix
  2. well. Line a spring-form tin’s base with foil & press mixture evenly over base.
  3. Refrigerate while filling is being prepared.
  4. Put fruit juice into a small saucepan with gelatine added & stir over low heat
  5. until gelatine is dissolved. Refrigerate until almost set.
  6. Beat the cream cheese, ricotta cheese, & condensed milk until soft & creamy.
  7. Gradually add the gelatine mixture whilst still beating, and then fold in the
  8. whipped cream.
  9. Pour filling into the spring-form tin & refrigerate until set.
