Salt and pepper the chicken pieces and sauté them in olive oil.
Add the wine and scrape any chicken that’s stuck to the pan.
Add the onions and cook till wilted.
Add the tomatoes (you can use fresh if you prefer but add 1 tbsp of sugar to the sauce) and stir to coat. Reduce heat to medium add 1 1/2 cups of water and stir in the orzo. Cover and simmer for 15-20 minutes till the pasta is cooked. But check the pot and add more water for the pasta if needed.
Serve hot with a green salad and top the pasta with grated cheese.
