• Father’s Day is done and it is time to get Sloppy!!! What’s more fun than a dish that fully allows you to get messy? In fact it is actually required! No fork and knife needed with these guys, unless of course some meat casually slips off the bun. This is a recipe that is more or less fool proof. No such thing as “too much of this” or “too little of that.” Contrary to our friends, “the meatballs,” you can taste the goods as you go along; no science involved. Personally, I enjoy using lean ground beef and throwing in a few light veggies to pump up the nutrition. Oh, and by the way, opened face is not about a fashion show to show off the final results; it is intended to cuts those carbs in half and switch on the green light for seconds. I don’t know about you, but I like my “seconds!!”

Ingredients

  • 1 lb. lean ground beef
  • 1 small red or yellow bell pepper seeded and chopped
  • 1 small green pepper seeded and chopped
  • 1 small yellow onion chopped
  • 1 cup tomato sauce
  • 2 tablespoon brown sugar
  • 2 tablespoon balsamic vinegar
  • 3/4 teaspoon chili powder (optional)
  • 2 tablespoon combination of fresh oregano & basil chopped OR 1 tablespoon of dried oregano and basil
  • 2 tablespoon good quality tomato paste (I love a tube as opposed to a can so the remainder does not go to waste)
  • 1/2 teaspoon garlic powder
  • 1 teaspoon Kosher salt
  • Ground pepper
  • 2 tablespoon olive oil
  • 4 hamburger buns

Preparation

  1. Heat 2 tablespoons of oil over medium-heat. Cook onions & peppers for 2-3 minutes.
  2. Add ground beef and once it starts to brown drain fat from the pan.
  3. Sprinkle in spices, brown sugar, salt & pepper. Continue to add in tomato paste, tomato sauce, and balsamic vinegar.
  4. Stir around well and let simmer for about ten more minutes until the mixture begins to thicken.
  5. Spoon on top of ½ seeded hamburger bun and ENJOY.
  6. Nic’s Tip’s – If you have leftover meat, wrap them up and give another dinner time twist to the “Joe’s!”
