• A deliciously filling oriental chicken salad.

Ingredients

  • 3 tbsp honey
  • 1 1/2 tbsp rice wine vinegar
  • 1/4 cup mayonnaise
  • 1 tsp sesame oil
  • 1 egg
  • 1/2 cup milk
  • 1/2 cup flour
  • 1/2 cup corn flake crumbs
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 skinless chicken breast half
  • 2 cup vegetable oil
  • 3 cup chopped romaine lettuce
  • 1 cup red cabbage
  • 1 cup napa cabbage
  • 1/2 carrot julienned
  • 1 green onion chopped
  • 1 tbsp sliced almonds
  • 1/3 cup chow mein noodles

Preparation

  1. Preheat oil in deep fryer
  2. Blend together all ingredients for dressing in bowl with mixer. Put in refrigerator to chill
  3. In small bowl, beat egg and milk
  4. In another bowl, combine flour with corn flake crumbs salt and pepper
  5. Cut chicken breast into strips dip each strip in egg then crumbs and fry for 5 minutes
  6. Prepare salad by mixing the romaine, carrots and cabbage. Sprinkle sliced green onions and almonds on top then add chow mein noodles
  7. Finally top with cooked chicken
  8. Serve with dressing drizzled over it or on the side
