Ingredients

  • 2 kilo of clams
  • 1 kilo of medium prawns
  • 1 kilo of squid (cut into rings)
  • 1 Pkg pasta (your choice)
  • 2 Tbsp Olive Oil
  • 1 Tbsp Butter
  • Ginger
  • Pepper
  • 1/2 cup Corn Starch
  • 1/4 cup clam juice
  • Handful of pinenuts
  • 3 Tbsp Parmesan Cheese
  • Sun dried or fresh tomatoes
  • Finely chopped basil (about 3/4 cup)

Preparation

  1. Cook pasta according to package directions
  2. Heat olive oil, butter. ginger and garlic in a medium sauce pan.
  3. When aromatic (about 5 minutes) add clams and prawns and a clam juice. Let cook until prawns turn pink and clams are tender.
  4. Coat the squid rings in corn starch. I prefer to lightly fry the squid separately from the prawns and the clams.
  5. Add the squid and sun dried tomatoes to the clams and prawns.
  6. Remove from heat and toss in the cooked pasta, Parmesan cheese, pine nuts and basil.
  7. Season with pepper to taste.
  8. Enjoy!
