• Use all your favorite raw veggies (plus those your kids won't normally eat); I use:
  • Sweet Peppers (Green, red, yellow & orange) - cut into strips
  • Zuccinni - cut into strips
  • Mushrooms (canned or fresh)
  • Bokchoy - cut every inch

Ingredients

  • 1 Lg. Onion chopped to the size you like
  • 1 lb. Skinless/boneless Chicken Breast sliced into strips
  • Olive Oil
  • Seasons to taste (I use pepper, mrs. dash, garlic salt)
  • Angel Hair Pasta Roni (look for the one that has fewer than 38g Carbs)
  • Cut veggies and place into large skillet/pan with lid; add Olive Oil. Turn heat to med/high. Cook for about 5 minutes before adding chicken. Reduce heat to med. Add seasonings. Stir every few minutes until veggies are as soft as you like.

Preparation

  1. To serve: Place pasta on plate and add chicken/veggie mixutre over top.
  2. My brother-in-law is diabetic and likes this recipe because the pasta has lower carbs than a lot of other pasta dishes.
