Ingredients

  • 1-3 lb beef tenderloin
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup unsalted butter
  • 4 cups fresh shiitake mushrooms
  • 1 clove garlic
  • 3/4 cup dry red wine
  • 1 cup beef broth
  • 1 tsp Italian seasoning

Preparation

  1. Pre-heat oven to 450 degrees Fahrenheit.
  2. Sprinkle beef evenly with salt and pepper.
  3. Place beef in an aluminum foil lined baking pan and bake for 15 minutes.
  4. Melt butter in a medium sauce pan over medium heat and add mushrooms and garlic; saute for 5 minutes.
  5. Stir in wine, beef broth, and Italian seasonings.
  6. Reduce heat and simmer, stirring occasionally for 10 minutes or until slightly reduced.
  7. Remove beef from oven and top with the sauce.
  8. Bake for 15 minutes more or until meat thermometer reaches 145 degrees Fahrenheit for medium rare or 160 for medium.
  9. Transfer beef to serving platter, let stand for 10 minutes before slicing.
  10. Serve with sauce, rosemary potatoes and steamed vegetables.
