Ingredients

  • Brownies:
  • 1/2 cup butter
  • 3 oz unsweetened chocolate, chopped
  • 2tsp instant espresso or coffee granules (optional)
  • 1 1/4 cups granulated sugar
  • 2 eggs
  • 1/2 tsp peppermint extract
  • 1 tsp
  • 2/3 cup flour
  • 1/2 tsp salt
  • 1/2 cup choco chips (optional)
  • preheat oven 350F
  • Icing:
  • 6 oz chocolate chips
  • 1/4 cup butter
  • 4 oz sourcream
  • 1 1/2 to 2 cups of sifted flour
  • 5-7 candy canes

Preparation

  1. Lightly butter and flour a 9 inch square pan ( I made another batch in a 2 bite version in a mini muffin pan)
  2. In a large saucepan over medium low heat, stir butter with chocolate and coffee granules, until melted.
  3. Whisk in sugar, eggs, vanilla and peppermint extract until blended.
  4. Stir in flour and salt until combined.
  5. Stir in chocolate chips.
  6. Bake 25 to 30 min (15 to 20 min in the mini muffin pan, I used little cupcake papers so it would not stick )
  7. Melt chocolate chips and butter over low heat cool 5 min, Add sour cream
  8. Gradually add sifted icing sugar, can all be done with a whisk.
  9. Refrigerate for 15 min until icing has hardened a little (used a Ziploc to ice the mini brownies)
  10. Double the Ziploc bags and put the candy canes inside, use rolling pin to crush coarsely.
  11. Sprinkle generously on brownies.
  12. ENJOY!
