This Pineapple Salsa, Mmmmmmmm recipe makes for an easy treat that is both tasty and satisfying.
2 Plum Tomaotoes
1/2 Small Red Onion
1 4-in, piece seedless cucumber
1/2 cup lightly packed cilantro leaves
1 medium pineapple
1/2 tsp. salt
Hull and remove seeds from tomatoes. Dice tomatoes, onion and cucumber. chop cilantro, combine tomatoes, onion, cucumber and cilantro. Cut jalapeno in half length wise and remove seeds. Finely chop jalapeno, add to batter bowl.
2)cut pineapple into small pieces. Juice lime to measure about 2 tbsp. juice. Add pineapple, lime juice and salt to batter bowl. Mix thoroughly until combined. Serve with Lime tortilla chips.
Preheat oven to 400*F. Juice lime to measure 2tbsp juice. Lightly brush one side of each tortilla with Lime juice; sprinkle lightly with salt. Cut each tortilla into 8 wedges using pizza cutter. Arrange on stoneware pan.
Bake 10 to 14 minutes (I would watch these carefully after first batch, if left to long they will burn---even though I enjoy them darker than dark YOU may not, lol). Bake untill lightly browned. Repeat until all cooked :D
