- 1 taco sized tortilla
- 2-4 tbsp prepared Quinoa
- 1 egg
- 3 tbsp Cottage Cheese
- 2 tbsp salsa
- 5 cilantro leaves
- Fry egg.
- When egg is mostly finished throw quinoa into pan and turn off heat.
- Allow egg to finish while quinoa heats.
- Heat tortilla by desired preference (stovetop or microwave) and assemble all ingredients.
